Sushi

握り — 巻き — 海鮮丼 · nigiri, maki & kaisen don

Fish arrives whole and is broken down in the morning. By evening it is cut to order: bluefin from lean akami through chutoro to otoro, salmon toro, smoked hamachi, cured saba, torched white tuna.

Nigiri comes two pieces to an order, already seasoned by the chef with nikiri, smoked salt or yuzu kosho, so there is nothing to add. The nine-piece omakase is the way to see the whole counter in one sitting; the kaisen don puts it all in one bowl.

Seven maki rolls, from the Dragon to the Cherry Blossom, round out the sushi bar.

Izakaya

居酒屋 — 炭火 — 揚げもの

The other half of Hiraki is a proper izakaya: small plates that keep arriving as long as the sake does. Karaage and katsu from the fryer, hamachi collar over charcoal, ribs glazed in ginger soy tare, and A5 wagyu seared on a hot stone at your table.

Order in rounds. Share everything. The drinks list leans dry and clean to sit beside raw fish, with richer junmai and smoky whisky for the grill.
